In a previous life, he played horn in the orchestra of the Gran Teatro La Fenice in Venice for years, before becoming a chef and opening a restaurant in Venice. "Since life is always unpredictable," explains Enrico Fantasia, "I now sell wine in Ireland and travel the world cooking for Hollywood stars and European aristocracy".
When time permits, he goes fishing for brown and seatrout in the great Irish lakes, and he likes to use flies typical of the Celtic tradition.
